Passover Recipes: Apple-Matzoh Kugel

Ingredients:

  • 4 large apples, Granny Smith or any tart apple, cored and cut into medium dice
  • 1/2 cup light brown sugar
  • 1/4 cup orange juice
  • 6 plain matzohs
  • 8 eggs
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups sugar
  • 1/2 cup (8 tablespoons) butter or margarine, melted
  • 1 cup golden raisins
  • 1 cup dried apricots, medium, chopped
  • 4 tablespoons butter or margarine, cut into small pieces, for casserole topping

Directions:

  1. Preheat the oven to 350°F.
  2. Toss the apples with the brown sugar and orange juice, set aside in a medium bowl.
  3. Break matzoh into 2- to 3-inch pieces and soak in 1 cup of warm water until soft but not mushy. Set aside.
  4. While the matzoh soaks, beat eggs with a wire whisk in a large bowl until blended. Add salt, sugar, cinnamon, melted butter, raisins, & apricots.
  5. Squeeze the liquid from the softened matzoh and add the matzoh to the egg mixture with the apples. Stir the kugel well and pour into a lightly greased 2 ½ -quart casserole dish or a 10×14-inch pan. Dot the top of the kugel with the 4 tablespoons of butter.
  6. Bake the kugel for 1 hour. Cover the top with foil if the top begins to become too brown early in the baking. Remove the kugel from the oven and cool to room temperature.

Ingredients:

  • 3 tomatoes, cut in half and seeds and juice removed
  • 2 matzo, ground well to resemble crumbs (In food processor if possible)
  • 1 tablespoon water
  • 1 tablespoon Herbes de Provence
  • 1 garlic clove, chopped
  • 1/4 cup freshly grated Parmesan cheese
  • Salt & Pepper to taste
  • Olive oil for drizzling
  • Parsley (for garnish)

Directions:

  1. Sprinkle salt onto tomato halves. Drizzle a shallow baking sheet with olive oil and place tomatoes atop.
  2. In a bowl, add ground Matzo and 1 Tb of water to moisten. Stir to incorporate.
  3. Add herbes de provence, Parmesan cheese, garlic and salt & pepper to matzo. Mix well.
  4. Stuff each tomato with matzo mixture, gently pressing down on the topping to get the filling into the tomato cups.
  5. Place on roasting dish and drizzle with additional olive oil on top. Bake at 400 degrees Fahrenheit for 15 minutes or until tomatoes begin to blister and topping begins to brown.
  6. When done, allow to cool and garnish with fresh parsley
Passover Recipes: Matzo-crusted Chicken

Ingredients:

  • 1 large egg
  • 8 unsalted matzos, crushed (about 3 cups)
  • 2 teaspoons coarse salt
  • 1/4 teaspoon freshly ground pepper
  • Safflower oil, for frying
  • 4 boneless, skinless chicken cutlets (4 to 5 ounces each), 1/2 inch thick
  • 4 lemon wedges, for serving

Instructions:

  1. Beat egg in a shallow dish. Mix crushed matzos, salt, and pepper in another shallow dish. Heat 1/2 inch of oil in a large cast-iron skillet until it registers 375 degrees on a deep-fry thermometer.
  2. Working with 1 at a time, dip cutlets into egg, then into matzo, pressing to adhere and coating both sides. Place 2 cutlets in skillet, and cook until golden brown, about 2 minutes per side. Transfer to paper towels. Repeat with remaining 2 cutlets. Serve immediately with lemon wedges.

Instructions:

  1. With shamrock cookie cutter, cut out as many shamrocks as possible from tortillas (about 7 shamrocks)
  2. Place on baking sheet. Spray shamrocks with cooking oil. Sprinkle with salt. Bake at 375 degrees for 7 – 10 minutes. Check often, they burn quickly.
  3. Serve with your favorite dip!

St. Patrick’s Day Recipes: Lucky Spinach Quiche

Ingredients:

  • 10 oz frozen spinach, thawed and drained 
  • 3 eggs
  • 1/3 cup half-and-half (or milk or cream)
  • 1/2 cup grated gruyere or cheddar 
  • 1/4 cup grated parmesan
  • 3 oz. cream cheese, room temperature 
  • 1/2 cup diced onion (white, red, or green onions)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 recipe pâte brisée (recipe below)

Instructions:

  1. Preheat oven to 425ºF. 
  2. Mix cream cheese and eggs, adding one at a time. Mix in the half-and-half, salt, & pepper. Then add the rest of the ingredients: spinach, gruyere, parmesan, and onions. Mix. 
  3. Shape crust in either of these two methods. Fill crust with mixture and place the aluminum tins on a baking sheet. Bake for about 20 minutes. Cool for 5 minutes.
  4. Carefully remove quiches from aluminum tins, line the baking sheet with parchment paper, and place quiches on the lined sheet. Place quiches back in oven for 5-10 minutes until the crust crisps. Let cool for 10 minutes, then serve. 
  5. Makes 3 quiches or 12 mini quiches

  • 1 tablespoon unsalted butter, cut into small pieces, plus more for pan
  • 3 tablespoons rolled oats
  • 3 cups all-purpose flour, plus more for pan
  • 1 cup unprocessed wheat bran flakes
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sour cream (16 ounces)
  • 1/2 cup sugar, plus more for sprinkling
  • 3 tablespoons canola oil
  • 3 large eggs, lightly beaten

Instructions:

  1. Preheat oven to 350, butter two 9 x 5 inch loaf pans, and then dust with flour, tapping out excess
  2. Sprinkle bottom of pans with 1.5 tablespoons oats
  3. In a large bowl, whisk together flour, bran flakes, baking powder, baking soda & salt
  4. In another bowl, whisk together sour cream, sugar, oil, and eggs
  5. Fold sour cream mixture into flour mixture until just combined.Divide batter evenly between prepared pans.
  6. Top each loaf with remaining 1.5 tablespoons oats, dot with butter, and sprinkle with sugar.
  7. Bake until golden (about 40 minute). Let cool completely in pans.

St. Patrick’s Day Recipes:  Festive Cheesecake Bars

Ingredients:

  • 1 1/2 cups chocolate wafer cookie crumbs (about 30 cookies)
  • 1/3 cup butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1/2 cup sour cream
  • 1 teaspoon Pure Peppermint Extract
  • 1/2 teaspoon Green Food Color
  • 3 eggs
  • 2 ounces semisweet baking chocolate, melted

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix cookie crumbs and butter. Press firmly onto bottom of foil-lined 9-inch square baking pan. Refrigerate until ready to use.
  3. Beat cream cheese & sugar in large bowl with electric mixer on medium speed until well blended. 
  4. Add sour cream and peppermint extract; mix well. Add eggs, one at a time, beating on low speed after each addition just until blended. 
  5. Pour 1/2 of the batter over crust. Tint remaining batter green with food color. Pour over batter in pan.
  6. Bake 25-30 minutes or until center is almost set. Cool completely on wire rack.
  7. Refrigerate 4 hours or overnight. Lift out of pan onto cutting board. Cut into bars. Drizzle bars with melted chocolate.

Ingredients:

  • 2 cups chopped romaine lettuce
  • 2 avocados, mashed well
  • 1 cup low-fat Greek yogurt
  • 2/3 cup black beans
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • Sliced black olives and scallions to garnish

Directions:

  1. Spread chopped romaine lettuce at the bottom of a large bowl.
  2. Add avocado layer on top, and smooth out with a spoon to even height.

Healthy Super Bowl Recipes: Zesty Baked Chicken Wings with Bleu Cheese Dip

Buffalo wings are a football food staple; however the sodium, fat, and grease that are usually found in them can knock those New Year’s diets off track. This recipe features  baked wings (no frying!) and reduced fat ingredients.

Ingredients:

Baked Wings-

  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • Dash of cayenne pepper
  • 1 teaspoon finely minced garlic
  • 1/2 teaspoon salt. 1/2 teaspoon pepper
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 16 chicken wings, halved at the joint and with the tip removed
  • 1 cup grated fresh Parmesan
  • 6 tablespoons chopped fresh parsley
  • 1 1/2 cup dried whole-wheat breadcrumbs

Bleu Cheese Dip-

  • 1 container (8 ounces) reduced fat vegetable cream cheese, softened
  • 1 cup reduced fat sour cream
  • 1 cup crumbled blue cheese (about 4 ounces)
  • 1 tsp. garlic powder
  • 1/4 tsp. freshly ground black pepper
  • 1 tsp. minced fresh parsley
  • 1 tsp. minced fresh dill weed

Directions:

Baked Wings-

  1. Put first seven ingredients (through lemon zest) in a large bowl, and whisk until combined. Pour over wings, transfer to a zip-top plastic bag, and marinate in the refrigerator for one to four hours.
  2. Preheat oven to 425º.
  3. Line a baking pan with foil. Spray foil with cooking spray; set aside.
  4. Mix together Parmesan, parsley, and breadcrumbs in a shallow dish. Coat wings in breadcrumb mixture. Place on prepared pan.
  5. Bake on lowest oven rack for 20 minutes, then turn and cook for 10 more minutes.

Bleu Cheese Dip-

  1. Place the cream cheese, sour cream, blue cheese, garlic powder, pepper, parsley and dill into a medium bowl.
  2. Beat with an electric mixer on medium speed until the mixture is blended.

Healthy Super Bowl Recipes: Mini Zucchini Pizzas

These zucchini pizzas are the perfect substitute for your usual pizza rolls or bagel bites because they use flavorful, fresh ingredients and are super easy to make. Your guests will be requesting more, promise.

Ingredients:

  • 2 medium zucchinis, sliced
  • 3 Tbsp pizza sauce
  • 2 Tbsp unsalted tomato paste
  • 1/4 tsp. oregano Dash of garlic powder
  • 3/4 cup reduced-fat mozzarella cheese, shredded
  • 1/4 cup reduced-fat parmesan cheese, shredded
  • 4 Turkey pepperonis, cut in half 8 olives, pitted and chopped

Directions:

  1. Preheat broiler on high.
  2. Slice zucchinis at a slight diagonal so that you have ~16 slices and place slices on a baking sheet and set aside. 
  3. Mix together your pizza sauce, tomato paste, oregano and garlic powder and spread about one teaspoon over each slice of zucchini.
  4. Mix together your cheeses and sprinkle about a tablespoon over each zucchini slice. Then add your chopped olives and pepperoni slices on top of the cheese and place baking sheet in the oven to broil for about 3 to 5 minutes, until cheese is melted.
  5. Serve immediately and enjoy!

  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons teriyaki sauce
  • 1 teaspoon liquid smoke flavoring
  • 1 tablespoon molasses
  • 1 tablespoon sesame seeds
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • ½ teaspoon garlic salt
  • ¼ teaspoon garlic pepper
  • 2 teaspoons minced garlic
  • ¼ cup canola oil
  • 8 skinless, boneless chicken thighs

Directions:

  1. Mix together Worcestershire sauce, soy sauce, teriyaki sauce, liquid smoke, and molasses in a resealable plastic bag until the molasses has dissolved. 
  2. Add sesame seeds, brown sugar, paprika, garlic salt, garlic pepper, minced garlic, and canola oil; mix well. 
  3. Coat chicken thighs with the marinade, seal, and marinate for 4 hours in the refrigerator, redistributing the chicken in the marinade occasionally.
  4. Preheat an outdoor grill for medium heat.
  5. Remove chicken from marinade and shake off excess. Grill on preheated grill until the chicken has reached an internal temperature of 165 degrees F (75 degrees C), and is firm and opaque, about 12 minutes per side.

Festive July 4th Dessert Recipes

Independence Day festivities would not be complete without a tasty treat, so today we’ve selected our favorite July 4th dessert recipes that we can’t wait to try. With so many berries in season right now, we recommend incorporating the colorful fruits into your red, white and blue themed dishes. Check out our top picks for July 4th dessert recipes.

July 4th Dessert Recipes: Mini Flag Cakes

Quick n’ Easy Method:

  • 1 box red velvet cake

  • One 8 oz container Cool Whip
  • 4 oz cream cheese
Blueberries

If you have the time, make the cake from scratch:

Directions:

  • Prepare the red velvet mini cakes either according to the package’s directions or following the recipe linked above.
  • While cakes are cooling, prepare the frosting. If you’re using the quick and easy method, let the cream cheese come to room temperature, then beat it with an electric mixer until super creamy and fluffy. Fold the beaten cream cheese into the Cool Whip gently with a spatula. If you’re making the whipped cream from scratch, first beat the softened cream cheese and set aside. Then use a whisk attachment for the electric mixer to whip the cream until stiff peaks form. Add the sugar and vanilla and whip for another 30 seconds. Fold in the cream cheese gently with a rubber spatula.
  • Pipe the frosting between layers and make 4 dots of frosting for the blueberries and 2 stripes across the top. We recommend making an extra layer of cake to cut up for the stripes (as seen in picture above).

July 4th Dessert Recipes: Individual Cherry Pies

Ingredients: 

For Pies:

  • 1 package double pie crust mix
  • 1 (20-ounce) can cherry pie filling
  • ½ teaspoon pumpkin pie spice
  • 2 tablespoons milk
  • 2 teaspoons sugar

For Blueberry Topping:

  • 1 pint fresh blueberries, reserve 1/4 cup for garnish
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 2 cups vanilla ice cream 

Directions:

  • Preheat oven to 400 degrees F.
  • Prepare pie crust according to package directions. Divide into 6 equal portions, roll into balls and refrigerate covered for at least 1 hour. On a lightly floured surface, roll each into a circle about 1/4-inch thick.

For Pies: 

  • Place each of the rolled out circles onto the baking sheet. Divide cherry pie filling into the center of each of the 6 pie crusts and sprinkle each with the pumpkin pie spice. Fold the edges of the pie dough over the cherry pie filling, making sure to leave the center of the pie exposed. Place a few of the reserved blueberries on top of each pie. Brush the sides of the pies with milk and sprinkle with 2 teaspoons of the sugar. 
  • Place pies in the oven and bake for 30 minutes, or until crust is golden brown and filling is bubbling. Remove from oven and allow to cool slightly.

For Blueberry Topping: 

  • In a medium sauce pan over medium heat, stir together blueberries, sugar, and two tablespoons water. Bring to a boil, reduce heat and simmer for 10 minutes. Turn off the heat and allow to cool to room temperature.

To serve, place 1 warm pie on 6 plates, top each pie with a scoop of vanilla ice cream and a generous drizzle of the blueberry sauce.

July 4th Dessert Recipes: Patriotic Pizzas

Ingredients:

For Crust:

  • 1 cup all-purpose flower
  • ½ cup confectioner’s sugar
  • ½ cup cold butter

For Flag:

  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 2 teaspoon vanilla extract
  • ½ teaspoon lemon juice
  • 2 cups halved fresh strawberries
  • ½ cup fresh or frozen blueberries

Directions:

For Crust:

  • In a bowl, combine the flour and confectioners’ sugar. Cut the butter into the dry ingredients until crumbly. Press the mixture onto a greased 12-inch pizza pan.
  • Bake at 325° for 10-15 minutes or until the crust is lightly browned. Let cool.

For Flag:

  • In a bowl, beat the cream cheese and sugar. Add the vanilla and lemon juice, mixing until smooth. Spread 1 cup cream cheese mixture over the crust. Set the remaining cream cheese mixture aside.
  • Referring to the photo for position, arrange five rows of strawberries on top of the pizza to create the red strips of flag. Place the blueberries in the upper left corner.

Best Summer Cocktails: Skinny Lemon & Lime Smash

During the summer, nothing seems quite as refreshing as a cool glass of lemonade. This low-calorie cocktail (only 130 calories!) combines citrus flavors and your white spirit of choice for the ultimate adult lemonade.

Ingredients (Serves 1):

  • 2 oz white spirit (silver tequila, citrus vodka or gin)
  • 2 lemon chunks + 3 lime chunks
  • 1 oz sugar–free syrup (i.e. Monin Sugar-Free Syrup) – you can find this online or at some grocery stores in the baking section

  • 5 mint leaves

  • Splash of Diet Sprite (if desired)

Directions: In a mixing glass, muddle the lemon & lime quarters and mint with the sugar free syrup with a muddler (or you can use a pestle). Add the white spirit. Top with ice and shake vigorously for a good count to ten. Strain into an ice-filled rocks glass. Garnish with a lemon & lime wheel and mint sprig. Add a splash of Diet Sprite, if desired.

Pitcher drinks are always a good idea if you’re hosting a large dinner party or outdoor event. This updated mojito recipe combines summer fruits with the refreshing mojito punch.

Ingredients (Serves 12):

  • 1 1/4 cups sugar
  • 1 1/4 cups freshly squeezed lime juice (about 9 limes)
  • 3 pounds Bing cherries
  • 18 ounces best-quality black cherry or plain vodka (www.beekmanliquors.com)
  • 1 bottle sparkling water (750 mL)

Directions:

Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar has dissolved. Remove from heat; let cool completely. (Makes about 2 cups syrup.) Syrup can be refrigerated in an airtight container up to 1 month.

Put lime juice into a medium nonreactive bowl. Halve and pit cherries; add to lime juice. Stir in syrup. Refrigerate at least 1 hour (up to overnight). Stir cherry mixture and vodka in a large serving bowl. Fill 12 glasses with ice. Spoon 1/2 cup cherry-vodka mixture into each glass. Top off with sparkling water. Serve immediately.

  • 1 red plum, pitted and sliced (reserve one slice)
  • 1 1/2 oz. lime juice
  • 1 oz. simple syrup
  • 2 oz. vodka
  • Tonic water

Directions:

Place plum slices in a cocktail shaker, and muddle or smash with a wooden spoon. Add lime juice, syrup, and vodka, then shake with 1/2 cup ice. Strain into glass with fresh ice. Top with tonic water and garnish with a plum slice; sprinkle sea salt on top just before serving.
